Method
1.Top 4 veal halves with 1 slice ham and 1 slice cheese. Top each with another veal half, pressing firmly to seal.
2.Lightly dust prepared steaks in flour, shaking off excess, then dip in combined egg and milk.
3.Coat with breadcrumbs, pressing on firmly. Transfer to a plate and chill for at least 20 minutes.
4.Heat oil and butter together in a large frying pan. Add steaks and cook for 3-4 minutes each side, until golden. Drain on paper towel. Serve with mixed salad leaves or vegetables of choice.
Instead of halving 4 large steaks, 8 small veal steaks can be used.
