Method

1.Grease a 2-litre (8-cup) pudding basin. Peel and slice 2 of the oranges. Juice remaining oranges; set aside. Line base and sides of prepared basin with orange slices.
2.Using an electric mixer, beat butter and sugar in a bowl until light and creamy. Beat in eggs, one by one, until combined. Stir in cinnamon, flour and milk until well combined. Spoon into prepared basin, being careful not to dislodge orange slices; level surface. Cover with a tight-fitting lid.
3.Place basin in a large heavy-based saucepan. Pour enough boiling water into pan to come halfway up side of basin. Bring to the boil. Cover with lid. Reduce heat to moderate; steam pudding for 1 hour or until a skewer inserted at centre comes out clean.
4.Meanwhile, combine reserved juice and marmalade in a small saucepan over moderate heat. Cook and stir for 3 minutes or until marmalade melts. Bring to the boil. Boil for 3 minutes or until reduced slightly.
5.Stand in basin for 5 minutes. Turn out onto a serving plate.
6.Serve pudding with sauce and custard.

Check the water level during cooking and top up with hot water if necessary.
