1.Preheat the oven to 220°C. Put egg and breadcrumbs in separate shallow bowls. Dip fish fillets in egg, then roll in breadcrumbs. Put on a baking tray and bake for 15 minutes until fish is just cooked.
2.Peel cucumber (if skin is thick), halve lengthways and remove seeds. Slice and put in a colander – sprinkle with 1 tsp salt and leave for 15 minutes. Rinse and then squeeze gently to remove liquid. Mix with vinegar and season with pepper.
3.Mix mayonnaise with dill, capers and mustard. Slice ciabatta into eight slices. Place salmon, cucumber, mayonnaise and salad in ciabatta. Serve with potato wedges.
