Method

1.Preheat oven to 180°C. Line an oven tray with baking paper.
2.Slice fish into even-sized 1cm fingers, Arrange on tray. Drizzle with maple syrup and season to taste. Bake 20 minutes, until cooked to taste.
3.Meanwhile, combine cabbage, carrot, apple and parsley in a large bowl. Toss combined mayonnaise and yoghurt through. Season to taste.
4.Bake rolls following packet instructions. Split and fill with coleslaw and fish. Drizzle with barbecue sauce to serve.

For extra crunch, sprinkle maple-coated salmon with 1/3 cup breadcrumbs before baking.
