Method

1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.In a large mixing bowl, combine mince, breadcrumbs, sauces, egg, onion and ginger; mix well.
3.Roll mixture into walnut-sized balls. Place noodles on a plate. Roll chicken balls in noodles; arrange on tray. Chill 15 minutes.
4.Thread 2 meatballs onto each skewer. Return to tray; spray with oil. Bake 20-25 minutes, until cooked through and golden.
5.To make Thai slaw, in a large salad bowl, toss cabbage, carrot, sprouts and mint together. In a jug, whisk all remaining ingredients together; drizzle half over salad when ready to serve.
6.Serve chicken skewers with salad and remaining dressing.
