Method
1.Toss calamari with oil in a bowl.
2.Heat a large frying pan on high. Cook calamari 1-2 minutes each side. Transfer to a serving bowl.
3.While calamari is still warm, add mesclun, orange segments, onion, cucumber and mint; toss well.
4.To make dressing, whisk all ingredients together in a jug. Pour over salad, tossing well.
If calamari rings are unavailable, buy cleaned hoods and slice into 0.5cm widths.
Note
