Barbecued barramundi with mango salad
1.In a small bowl, combine coriander, lime juice, oil and garlic. Add the fish, turning to coat. Marinate, covered, in the fridge for 20 minutes.
2.To make salsa: In a small bowl, combine all the ingredients.
3.Preheat a flat barbecue plate on high. Barbecue fish for 3-4 minutes each side, until flesh flakes easily when tested with a fork. Serve with the salsa.
Never leave fish at room temperature for more than a few minutes as it deteriorates quickly. Fish will become very tough if overcooked.
