1.Preheat oven to 190°C (170°C fan-forced). Lightly grease a 12-hole, 1/3 cup-capacity muffin pan.
2.Sift flour and bicarbonate of soda into a large bowl. Add sugar, pecans and orange rind; mix to combine. In a separate, mix together sour cream, egg, butter and maple syrup. Add to dry ingredients. Add mashed banana; mix until just combined. Do not over-mix.
3.Spoon into prepared pan. Bake 20 minutes, until a skewer inserted comes out clean. Stand in pan 2 minutes, before turning out onto a wire rack. Serve warm or cooled dusted with icing sugar, if desired.
To yield 3/4 cup of mashed banana, you will need about 1 1/2 bananas.
