Method

1.Heat oil in a large saucepan; cook leek and garlic, stirring, until leek is tender. Add spices; cook, stirring, until fragrant.
2.Add pumpkin, potato, stock and the water to pan; bring to the boil. Reduce heat; simmer, covered, about 20 minutes or until vegetables are tender.
3.Blend or process mixture, in batches, until smooth. Return mixture to pan; stir until hot.
