1.Heat oven to 180°C. Line a loaf tin with baking paper.
2.Add mashed banana, coconut, flour, baking powder, eggs and salt to a large bowl and mix together.
3.Heat coconut oil and syrup in a saucepan over a low heat until coconut oil is melted. Pour into the banana mixture and stir together until well combined.
4.Pour into loaf tin and bake for 50-55 minutes, until a skewer comes out clean. Wait for it to cool down slightly (20-ish minutes), slice and enjoy while still warm!
