Apricot Chicken with Rice
1.Combine flour and seasoning mix in a plastic food bag. Add chicken and shake to coat well in seasoning. Heat 1 tablespoon of oil in a large frying pan over moderate heat. Add chicken; cook and turn for 5-8 minutes or until seared. Transfer to a large heatproof plate.
2.Heat remaining oil in pan. Add onion; cook and stir for 4-5 minutes or until soft. Stir in nectar with 1/2 cup water. Bring to the boil.
3.Return chicken to pan with apricots. Simmer, uncovered, stirring occasionally, for 10 minutes or until chicken is cooked and sauce thickens slightly.
4.Add capsicum and beans to chicken mixture. Cook and stir for 3-5 minutes or until vegetables are tender. Remove from heat; stir in parsley. Spoon rice onto serving plates. Top with chicken mixture. Serve at once.
Tip: To make your own Portuguese seasoning, use a mixture of ground paprika and finely grated lemon zest.
