You can’t beat a classic sticky date pudding for dessert. Try our version with a miso caramel sauce – the miso adds an incredible umami flavour that is so addicitve!

Preheat oven 180°C. Grease a 20cm round cake pan. Line base and side with baking paper.
Place dates, 1¼ cups (310ml) boiling water and baking soda in the bowl of a food processor. Top with the lid and stand for 5 minutes.
Add sugar and butter to date mixture. Pulse for 5 seconds or until dates are coarsely chopped. Add eggs, then flour, pulsing for 10 seconds or until ingredients are combined. Pour mixture into pan.
Bake for 55 minutes or until a skewer inserted into the centre comes out clean. Leave pudding in pan for 5 minutes before placing, top-side up, on a plate.
To make caramel sauce, place ingredients in a medium saucepan over medium-high heat. Simmer, stirring, for 8 minutes or until thickened slightly.
Serve hot pudding with warm caramel sauce.
What is miso?
Miso paste is a traditional Japanese seasoning, made by fermenting soy beans with other ingredients which creates an umami flavour.
