Impossible pie gets its name not from being difficult, but from being super easy to make! This version encases cheese, ham, spinach and chargrilled capsicum, creating its own ‘pastry’ crust through the cooking process.

This makes for a perfect weekend brunch, or make in advance for food prep during the week!

Method

1.

Preheat oven to moderate, 180°C.

Lightly grease a deep, 25cm pie plate. In a large jug, whisk together milk, eggs and butter; season to taste.

Sift flour into a large bowl. Make a well in the centre and gradually whisk in milk mixture.

4.

Mix in 1/2 cup cheese, ham, spinach (squeeze out any excess liquid first), capsicum, onion and parsley.

5.

Spoon mixture into prepared pie plate. Sprinkle with remaining grated cheese; bake 45-50 minutes, until firm.

6.

Serve pie in wedges with salad.
