1.Preheat oven to 180°C/160°C fan forced. Lightly grease a 6-hole (1-cup) Texas muffin tray with melted butter.
2.Heat extra butter in a frying pan over moderate heat until melted. Add onion; cook, stirring, for 10 minutes or until onion is golden and soft. Add vinegar and sugar; cook and stir for 5 minutes or until mixture is thick and sticky. Cool.
3.Sift flour into a bowl. Stir in carrot and feta. Whisk egg, milk and oil in a jug. Gently fold into flour mixture until just combined (don’t over mix). Divide mixture among prepared holes. Top with caramelised onion.
4.Bake for 30 minutes or until a skewer inserted at centre comes out clean. Cool for 5 minutes. Transfer to a wire rack. Serve warm or cold.
You’ll need to grate 1 small carrot. Swap carrot for zucchini.
